This tasty and quick fix vegetable side dish packs big nutrition. Add tofu or your favorite legume to make this into a complete vegetarian entrée.
- 1 cup vegetable broth
- 2 bunches kale, coarsely chopped
- 2 pounds butternut squash, medium dice
- ½ one red onion, julienne
- ¼ cup apple cider vinegar
Heat 1/2 cup vegetable broth in medium pot and add squash.
Simmer squash until just tender, 6-8 minutes and add kale.
Simmer an additional 2-3 minutes until kale is wilted and then set aside to cool.
Heat remaining vegetable broth and vinegar in a small sauté pan Simmer for 6-8 minutes until liquid is reduced by 2/3 then set aside to cool.
Toss kale and squash and onion with vinegar broth reduction and serve.
