Honey Lime Tropical Fruit Salad with Toasted Quinoa

				Use quinoa in a sweet dish for a great source of texture and protein! This bright, sweet, tart, and nutty tropical fruit salad makes a great addition to yogurts or parfaits.
Ingredients
- ½ cup quinoa, rinsed and drained
 - 1 cup water
 - 1 pineapple, peeled and medium diced
 - 2 mangos, peeled and medium diced
 - 1 pint strawberries, hulled and quartered
 - 3 kiwifruit, peeled and quartered
 - 2 oranges, peeled and segmented
 - ½ cup pumpkin seeds, toasted
 - 3 tablespoons honey
 - 1 lime, juiced
 
Preparation
In a small saucepan, combine the quinoa with 1 cup of water, bring to a boil and then lower to a simmer until all liquid is absorbed, about 20 minutes.
Meanwhile, combine all the fruit and refrigerate to chill.
Heat oven to 350°F. Spread quinoa in an even layer over a foil-lined baking sheet. Toast until golden, stirring occasionally, about 10 minutes.
Toss the pumpkin seeds, honey, and lime juice with the fruit. Sprinkle with the toasted quinoa and serve.
